Going green, CSA week three

It is Monday morning. On Tuesday, we’ll go back to the farm to pick up another huge basket full of delicious green food. But our refridgerator is still full!

Over the last week, we have managed to eat 3 heads of lettuce along with 2 pounds of salad greens and spinach. We still have the following:

  • 1 head lettuce
  • 1 pound sugar snap peas
  • 2 bunches of kale
  • 1 bok choy
  • broccoli and cauliflower
  • green onions
  • sorrel
  • mizuna
  • lemon balm
  • oregano and basil
  • cherries and peaches

We obviously cannot eat this much food in 24 hours, so I am trying to figure out what I can cook that can go straight into the freezer. I am also trying to figure out what we can make that will be easy for lunch through the week. Here is the plan so far:

For the freezer:

  • Black beans with kale and ham (will serve on brown rice or polenta)
  • Broccoli, rice and cheese casserole
  • Chicken and vegetable coconut curry soup (will serve over jasmine rice)

For easy lunches:

  • Szechuan Noodles with bok choy and cauliflower
  • Quinoa salad with cherries and mizuna

That leaves dinner tonight, which will be cauliflower soup, salad and homemade bread.

When we signed up for the CSA, I was not really thinking about storing away food for the winter, but we’re definitely getting more food than we can consume each week. It is a lot of work on this end, but  it will be nice to have a freezer full of healthy meals next fall!

Thanks so much for your prayers for our family. It means a lot to me. Emelia and Charlie are doing well. I think it was harder on them for us to be gone than it has been to have a new brother. Levi is doing great. I took him to the doctor today and he is totally healthy! No ear or lung infections! Amazing, considering he lived with 70 other children. Thanks again. Hope you and your boys are doing well.
