Farm to table, week one

On Tuesday afternoon, we went out to Jubilee Farm in Carnation, Washington to pick up our first box of local, organic produce.

With Zephan on my back, Asher running ahead and Micah wandering behind, I headed out to the strawberry fields where we picked five pints of strawberries. From there we picked two pints of sugar snap peas and then a few bunches of oregano. Inside the barn, we packed up lettuce, spinach, braising greens, radishes, cauliflower and a few other vegetables I had never seen before.

When we got home, I had to figure out first how to get everything in the fridge – and then what to do with the mountains of greens!

On Wednesday night, we made rotini with sausage, canellini beans, sundried tomatoes, herbs and braising greens. On Thursday, we had Thai red curry made with spinach, basil, cilantro, peppers and chicken over jasmine rice. Tonight we’ll have dahl with basmati rice, roasted cauliflower and chapati. On Saturday, we’ll have lemon chicken with green beans, noodles and the radishes. On Sunday, will have a nicoise salad made with salmon and – hopefully – most of the rest of the vegetables.
